Preserving the Harvest

Ever wish you could have the sweet cherry tomato flavor over the winter? Now you can! A simple way to preserve cherry tomatoes is to dehydrate them. The sugars become concentrated and they are a delicious, healthy snack any time of year.

All you have to do is cut in half and use your dehydrator or your oven, set at its lowest setting. Dehydrating times vary, but they are done when they are a bit chewy and all the moisture is out. These chewy pieces of goodness will last in an airtight container for months.
